Campfire Meal Recipes


These recipes are meant to be wrapped in aluminum foil and placed in a campfire. Make sure you get the fire hot enough and then place the packets in the hot coals! MMM MMM! (some recipes include a pie maker)



What you will need:

Loaf of Bread

2 tablespoons butter

2 teaspoons sugar or brown sugar

1 teaspoon cinnamon

1 can Apple Pie Filling ( here you can substitute any pie filling you desire…peach, cherry, etc.)

Cooking Spray

Cast iron pie maker or regular pie maker. A can opener.

A campfire of course!

Spray cooking spray on both sides of your pie maker. Butter two slices of bread. Sprinkle sugar and cinnamon over the buttered bread. Place the buttered/sugar bread face down into your pie maker. Press the middle part of the bread down with your fingers to create an area for your pie filling. Scoop the pie filling onto one side of your bread. Close the pie maker carefully, clip, and place into your campfire coals. Turn the pie maker every 5 minutes…checking the browning of your pie. The butter/sugar caramelizes, instant hot apple pie goodness! Enjoy!



What you will need:

4 boneless chicken breasts

1-3/4 cup instant rice

1-3/4 cup chicken broth

1  can (15oz) black beans- drained

1 red pepper (chopped)

1 onion (chopped)

1 jar salsa ( I use Newmans Own Medium)

4 teaspoon cumin

4 teaspoon cayenne pepper

2 teaspoons salt

2 teaspoons pepper

1 lime

2 cups cheddar cheese or mexican mix

1 avocado

1/2 cup greek yogurt

1/2 cup diced green onions

1/2 cup tortilla strips (optional)

Hot sauce of your liking, we love cholula!

Cooking spray, aluminum foil, a campfire.

Prep 4-10 inch long pieces of aluminum foil. I double line them so the packet doesn’t break in the campfire. Spray the inside of the foil with cooking spray to prevent sticking. In a bowl, combine instant rice and chicken broth. Let stand for 10 minutes or until the rice has absorbed all of the broth. Place a chicken breast in the middle of each packet. Add a teaspoon of cumin and a teaspoon of cayenne pepper to each packet. Divide salt and pepper evenly to all 4 packets. Evenly distribute red peppers, onions, black beans, salsa and rice/broth mixture to each packet. Squeeze lime juice on the top of each mixtures and then fold over and roll in the sides. Place into your campfire coals, turning every 10 minutes. Chicken should be fully cooked after 30-40 minutes. Open packet and top with cheese, avocado, greek yogurt, green onions, and tortilla strips! Delicious!



What you will need:

4- 6oz salmon filets

4 to 8 tablespoons of butter

2 lemons

4 tablespoons dill

bundle of asparagus

6 to 8 red skinnned potatoes (chopped into cubes- I usually boil these first to help them cook faster in the fire. That way you don’t overcook the salmon)

4 teaspoons salt

4 teaspoons pepper

4 teaspoons garlic powder

4 teaspoons onions powder

Cooking spray, aluminum foil, and a campfire!

Prep 4-10 inch long pieces of aluminum foil. I double line them so the packet doesn’t break in the campfire. Spray the inside of the foil with cooking spray to prevent sticking. Place a salmon filet in the middle of each foil packet. Evenly distribute asparagus and potatoes into each packet. Top salmon with 2 tablspoons of butter, 1 tablespoon of dill, and a squeeze of lemon. Sprinkle a teaspoon of salt, pepper, garlic powder, and onion powder over the potatoes. Fold over the foil and roll in the sides. Place into your campfire, flipping after 10 minutes.  Cook additionally until the potatoes and asparagus are tender. Yum!



What you will need:

1 package Andouille Sausage (I get the precooked)

1 pound Peeled Raw Shrimp

3 Ears of Corn

1 Sweet Yellow Onion

5-6 Red Skinned Potatoes

1/2 teaspoon Sea Salt

1/2 teaspoon Pepper

1/2 teaspoon Paprika

1/2 teaspoon Cayenne Pepper

2 tablespoons Minced Garlic

1 tablespoon Cajun Seasoning

2  whole Lemons, Cut into Wedges

4 tablespoons Butter

1/2 cup Chopped Parsley

~Aluminum Foil, Pam, Mixing Bowl, Campfire

Prep 4- 10 inch long pieces of aluminum foil. I double line them so the packet doesn’t break in the campfire. Spray with Pam to reduce sticking. Set aside. Chop red skinned potatoes into cubes and cut corn cobs in thirds. Place into a pot of boiling water for 10-15 minutes to soften. Cut sausage into 2 inches pieces and add into a bowl with shrimp, onions, corn, potatoes, butter, half the lemon, garlic, and all seasonings. Stir together and coat evenly. Divide mixtures into aluminum foil packets and squeeze extra lemon on top. Sprinkle with parsley. Fold the aluminum foil over and then fold in the sides. Sometimes for extra safety, I will flip the packet over onto another piece of foil. Then I will fold up the sides. Place into the campfire coals and cook for 8-10 minutes. Flip and cook another 8-10 minutes. Sometimes it takes a little more time, depending on the strength of your campfire heat. Check packet to see if its fully cooked. Bon Appetit!!



What you will need:

1 pound Chicken Breast

3/4 Sweet Yellow Onion

1 Green Pepper

1 Red Pepper

1 Poblano Pepper

2 Tablespoons Olive Oil

2 teaspoons Cumin

1 teaspoon Black Pepper

1 teaspoon Cayenne Pepper

1 teaspoon Garlic Powder

1 teaspoon Paprika

~( Substitute a “Homemade Fajita Seasoning” packet in place of all seasonings above if preferred)

Fajita Mixins’: Flour Tortillas, Diced Tomatoes or Pico de Gallo, Avocado, Cheddar Cheese, Greek Yogurt or Sour Cream, Hot Sauce

~Aluminum Foil, Pam, Cutting Board, Knife, Campfire

Prep 2- 10 inch long foil packets. Double line for more stability in the campfire. Spray the inside layer of foil with Pam cooking spray. Cut chicken, onions, and peppers into strips. Place evenly in both foil packets. Add a tablespoon of olive oil to each packet. Add seasonings to each foil packets. Fold over foil and roll in the sides. Place into your campfire coals for 10-15 minutes a side. Check packet to see if chicken is fully cooked. Add all your fajita fixins’ and enjoy!



What you will need:

4 oz. Ham (cut into cubes)

1 Can Diced Pineapple or a Whole Fresh Pineapple (whatever you prefer)

2 Whole Jewel Yams or Sweet Potatoes

1 Red Bell Pepper

1/2 Sweet Yellow Onions

1 Tablespoon Brown Sugar

2 teaspoons Honey

2 Tablespoon Pineapple Juice

1 Tablespoon Butter

~ Aluminum Foil, Cutting Board, Knife, Pam Cooking Spray, Campfire

Cut ham into 1 inch cubes. Peel sweet potatoes, cube, place in a bowl, and microwave for 4 minutes. Cut onion and red pepper into cubes. Prep 2- 10 inch foil packets, double lined. Spray inside of foil with Pam cooking spray. Divided ham, pineapple, onions, and peppers into foil packets. Add 1 Tablespoon of brown sugar and 1 teaspoon honey to each packet. Divide pineapple juice and butter into each packet. Fold over foil and roll in sides. Place into campfire coals for 20 minutes a side. Check packet to see if fully cooked. Hawaiaan Ham Goodness!
